Caribbean Cocktail Recipes - Camana Bay Grand Cayman

Cocktail recipes from Camana Bay Restaurants, Grand Cayman


(2) Cocktails from ABACUS - Contemporary Caribbean Cuisine 


Local Passion Fruit Bellini
  • 1 ½ oz local passion fruit puree 
  • Prosecco 
  • Add 1 ½ oz of local passion fruit puree into a chilled champagne glass. 
Top up with Prosecco. Serve in Champagne glass 



The Hugo 
  • 1 oz Elderflower Liqueur 
  • ½ oz lemon juice 
  • Local Mint 
  • Prosecco 
In a Chianti glass add together fresh local mint ½ oz of lemon juice, 1 oz of Elderflower Liqueur. Add ice and stir. Serve in Chianti Wine Glass, and top up the glass with Prosecco. Garnish with mint leaves & lemon wedge 






Gin Thai Basil Smash
  • 1.5 oz Bombay East gin 
  • 7-8 Thai basil leaves 
  • ½ oz lime juice 
  • ½ oz simple syrup 
  • Splash soda 
Add all spirits to shaker, add ice and shake. Double strain over ice in a rocks glass. Top w/soda, and garnish with Thai basil sprig 





Ca phe sua da - (Vietnamese iced coffee with milk
  • 3 oz warm coffee 
  • 1 ½ oz Local Blackbeard’s Coconut Rum 
  • 1 oz sweetened condensed milk 
  • Ice 
Stir together the warm coffee and condensed milk. Once incorporated together stir in the Local Blackbeard’s Coconut Rum. Fill the stemless wine glass half fill with ice and pour the coffee mixture over top. Serve with a straw in a stemless wine glass.
